Any
part of the carcase can be used for diced beef. Lackham Farm butchers dice
the neck, blade, shin(fore only) flat rib and hindquarter flank. These are
well exercised parts of the animal and for this reason these cuts may be tough.
Siutable for slow cooking, braising, pot roasting and casseroling.
